Destemmed grapes were directly-pressed and began fermentation in stainless steel before being bottled under cork to finish fermentation and rest for 12 months. The bottled wine was then disgorged before a further rest in the cellar. For an ancestral method sparkling wine this displays great complexity with an elegant herbaceous quality that is complimented by stonefruit and broad minerality.
