The grapes were destemmed and macerated for 2 weeks. After primary fermentation was complete frozen must from the previous harvest was added to initiate secondary fermentation. It was then bottled under cork and aged on the lees for 12 months. The finished wine boasts an exceptionally fine bubble, with delicate brioche notes, lively citrus fruit, and a subtly floral nose. A versatile choice, perfect for pairing with any meal or as an elegant aperitif.
