From Stéphane's new parcel in Bouligny. This 0.6ha plot is slightly more exposed than the other, seeing a cooling influence from the wind in the evening. The quality of the fruit was high here, and so, with the decision to use the rest of his Pinot in A L'Origine, Stéphane chose to vinify this parcel on its own.
The fruit was picked and then macerated for 12 days in whole bunches before being pressed off and aged in stainless steel tank. There was only a small amount produced and so only bottled in magnum. A stunning wine, displaying all that we love in Stéphane's Pinot. Lightly structured with a terrific balance of berries, earth and spice. We received just two cases.
