A wine that Stéphane makes only when the quantities are not sufficient to separate the parcels. This is 2 parts Pinot Noir from the heavy clay soiled Acratus parcel to 1 part Gamay from a new parcel of sandy limestone-based soils. Harvested at slightly different times the two varieties were each macerated in their bunches and pressed to cuve before being blended the following March. Fine tannins pair with a dense fruit profile giving an elegant wine that is sure to develop wonderfully over the coming years.
