From Romain’s 100-year-old parcel of Grolleau just next to the house. The grapes were harvested and left to ferment in whole bunches in open-top tank for 4 months. Pressing was long and slow in a small, vertical basket press before elévage in cuve until March. Romain’s gentle touch has allowed the old vines to show their power and complexity. At just 11.5% this has a delicate structure balanced by candied red fruits and pleasantly tart acidity. A Grolleau for all seasons that will age superbly.
