Chausée Sauvage

Lé Thio Noots (Loire)
Sauvignon Blanc • 2023

From Romain’s highest elevation 40-year-old vines planted on schist and clay soils - the grapes were slowly pressed for 7 days for the gentlest extraction. A lot of rain fell around harvest time resulting in a lighter, fresher style than previous years and was the reason why Romain opted for élevage in cuve rather than the typical barrique. Bright and refreshing, this wine is pleasantly textured with soft citrus notes and an appealing saline finish.
