Pineau d’Aunis / Grolleau / Gamay / Cabernet Franc • 2021

A blend of all of Damien’s red varieties. After a cool 2021 the maturation of each variety was spread out causing a lot of fermentations to take place separately. The Pineau d’Aunis and Grolleau were fermented together in whole bunches for 12 days while the Cabernet Franc and Gamay were fermented in whole bunches for 45 days. The vats were combined in winter allowing them to settle for a further 4 months before bottling. The Pineau d’Aunis really leads this wine with dark brambly fruit, pepper and a bright acidity - an incredibly detailed wine displaying a wonderful lightness-of-touch.
