This late-picked style comes from Damien’s oldest parcel of Chenin Blanc and is only made in years where the conditions are perfect for noble rot. After harvesting in late October the grapes were pressed and aged in a 600 litre barrel with no topping up for 5 years. This has an extraordinary concentration of candied apple and quince, with a rich oxidative note and shows the heights this amazingly versatile grape can reach. Standing up well over multiple days, this is a perfect by-the-glass pour.
