Stephane Kuivarc’k is a cuvée of 100% Pinot Auxerrois from the Bas Rhin in Alsace, vinified in trompette-style in fibreglass tanks. In this iteration of trempette vinification, two thirds of the grapes are directly pressed, and the remaining third of the grapes are added as whole bunches into the juice to macerate for 3 weeks before pressing.
