The fruit here was sourced from 40-year old vines planted on clay and limestone soil in Carcassonne. All the grapes were hand-harvested before a 6 hour direct press. The juice saw 1 month of fermentation in cuve before finishing its ferment in bottle and was then disgorged one year later. It displays an aromatic exotic nose which reveals a rich, fruity complexity on the palate with a bright and refreshing effervescence.
