Grenache Noir and Alicante from Carcassonne, planted on calcareous sandy soil. The grapes were macerated for 6 months in whole bunches before being pressed into demi-muid for a year. This has been in bottle for 3 years allowing the tannins to soften a little. A truly intriguing wine which has started to show signs of the extended ageing - layers of dried fruit and damp forest come through alongside a startlingly fresh acidity. Despite being high in alcohol this shows remarkable balance and freshness.
