As if an ode to the trempette-style winemaking, the 2022 cuvée Kube features not one but two separate trempette-style vinifications. Made from an assemblage of 40% Grenache Gris, 40% Grenache Noir from Roussillon-based winemaker Vincent Lafage, and 20% Grenache Blanc from Davide Caër in Hérault, the first two Grenaches from Lafage are vinified together in one fibreglass tank in a 50/50 trempette (with half the grapes directly pressed, the other half left to macerate as whole bunches) and the Grenache Blanc undergoes the same treatment in yet another fibreglass tank. Both macerate in their respective trempettes for a total of 10 days before pressing. The resulting wine is generously aromatic with plenty of freshness and lift.
