Made with grapes sourced from vigneron Patrick Dumarché in Ardèche, this cuvée is a decidedly complex number in terms of its vinification. The Carignan grapes are split into two fibreglass tanks, one of which is split whole bunches and de-stemmed, and the other which is entirely whole bunches. The two are vinified separately, and the free run juice pulled from both throughout the process and vinified, again, separately. This cuvée is made exclusively of the free run juice from both tanks, bringing to the bottle only a whisper of density and rusticity from the maceration, and a focus on bright juicy fruit.
