The grapes were harvested in four passages through the vineyard for varying levels of ripeness, with each picking macerated in their bunches for 5 days before the press. After a short élevage the separate tanks were blended and then bottled with the addition of must frozen from the same harvest. The resulting pétillant is perhaps the most complete rendition of this cuvée we have tasted, showing wonderful balance with bright acid and aromatic tropical fruit.
