Cabernet Franc/Grolleau • 2020
From a single parcel planted on calcareous soils with vines aged up to 90 years old. The Grolleau was de-stemmed and macerated for 5 days while the Cabernet Franc was macerated separately in whole bunches for 10 days, after which the grapes were both pressed and juices combined for élevage in cuve. The resulting wine is heady with florals and herbaceous notes from the Cabernet Franc and a punch of tart fruit from the Grolleau. Wonderful lightly chilled.
