Whole bunches of Raffiat were delicately macerated for 5 days then aged for a year in barrel sous voile. The resulting wine shows only very delicate oxidative notes, the ageing under flor seemingly adding just a saline layer to the wine which is otherwise all stone fruit and minerals.
