The grapes were destemmed and underwent a 1 week maceration before 9 months of élevage in amphorae. Sumoi (or in Spanish Sumoll) is an indigenous grape variety that can be challenging to work with due to its thick skins, which can easily result in rough tannins. However, Moisés’ judicious use of clay amphorae helps to soften the tannins, creating a fresh, delicate red. With bright, acid-forward red fruits, refined structure, and smooth tannins, this wine offers a delicious and unique expression of this previously forgotten grape.
