Legendary farmer, vigneron, and winemaker Remi Poujol provided the fruit for Kolombour, handing over the 50% Bourboulenc and 50% Colombard that make up the cuvée. The two are indigenous varieties to the Hérault region where Poujol farms, although Colombard has become much more widely planted as an easy-ripening, often insipid variety that’s used to blend into cheap, mass-produced Languedoc whites. Remi maintains old vines that are carefully maintained to produce fruit of charm, character, and terroir. Planche and Dagand put their de facto Karnage mark on the fruit by giving it a 10-day trampette-style maceration, directly pressing the Bourbelenc and adding in the whole bunches of Colombard.
