In late summer 2021, Tom made a macerated wine from grape varieties as Muscat Ottonel, Pinot Gris and Gewürztraminer. The wine was then added to a barrel of beer brewed 9 months earlier. Just before bottling the beer then underwent a short maceration with some Moro blood oranges. This has an extremely vinous profile and delicate dancing aromatics.
