The second vintage from Amaury Beaufort’s single-hectare Polisy plot, Jardinot 2019 was crafted in quite the same way as his previous vintage, amending only the length of élevage (with disgorgement in March of 2022) to account for a few new oak barrels used during élevage after alcoholic and malolactic fermentations in foudre. Like the 2018, this iteration of Jardinot is bottled without dosage, and maintains a line of tension and minerality with a certain rounded opulence not found in its previous vintage.
