A stunning first vintage from newcomer Amaury Beaufort. Hailing from a 1-hectare parcel planted on the kimmeridgian and portlandian clays of Polisy, the 2018 Jardinot is composed of 80% Pinot Noir and 20% Chardonnay. Amaury begins the winemaking process in foudre, where the fruit undergoes both alcoholic and malolactic fermentations. After the completion of both, the wine is moved into demi-muid for a period of élevage before returning to foudre for a final round of élevage before commencing secondary fermentation in bottle via the addition of frozen musts of the same vintage. Bottled without any additional dosage and disgorged in October of 2021, the Jardinot offers a broad and complex wine of elegance, punctuated by fine bubbles and a palate of expressive fruit and minerality in equal measure.
