A blend of young and old vines from two of Sébastian’s parcels in Saint-Étienne-des-Oullières. The hand-harvested, whole bunch fruit macerated for 3 months in cuve before a slow vertical press. The juice then rested for 6 months in fibreglass before bottling. Blue granite and sandstone are present in the soils of these parcels bringing a hint of minerality to this seductively deep, bolder style of gamay. Rustic tannins and bold cherry fruit round out the structure, so there’s no doubt this wine will age gracefully.
