Introducing Domaine Fond Cyprès

Having met Laetitia Orliac and Rodolphe Gianesini in the Loire earlier this year at La Dive we are extremely excited to now see the first of their wines arrive in the UK. 

Fond Cyprès was born in the early 2000s when married couple Laetitia and Rodolphe purchased their 15ha vineyard in Escales in northern Corbières. After striking up a friendship with none other than Frédéric Cossard in 2004 they made the decision to work as naturally as possible, both in vineyard and cellar, and since 2006 their land has been certified organic. 

Grenache, Syrah, Carignan and a mix of white varieties are planted on blue marl and lie in the shadow of the neighbouring forest, giving a cool respite in the evening after the blistering heat of the day. Over the last 15 years they have harnessed the capabilities of this special plot to produce varietal wines of real elegance and finesse, as well some blends that challenge what wines of the appellation should be. 

The majority of their wines will arrive on the cusp of autumn but for now we have shipped some of the more affordable and lighthearted wines, we think most suited to the warmer months - Cyprès de Toi Rosé, Cyprès de Toi Rouge and 1er Jus

The Wines

Cypres de Toi Rosé 2019

Malbec purchased from a friend nearby. The grapes were directly pressed and saw a 9 month elevage in stainless steel. A textural, floral rosé which works as well at the table as it does in the park. 

Cypres de Toi Rouge 2019

Younger vines of Grenache, Syrah and Carignan from the domaine, raised in concrete for 9 months. Supple, brambly with a hint of tannin, this is a wine for every day of the week.

1er Jus 2019

Carignan grapes were infused for two days in directly-pressed Grenache juice, then aged for 6 months in old barrels. Described by Laetitia as “neither rosé nor red” - we couldn’t put it better ourselves. A real wine of summer that we are very happy to have in good supply.
