From vines planted close by in Limoux. The grapes were brought back to the cellar and macerated in whole bunches for 6 days before being pressed off to cuve. It was bottled before winter to finish its fermentation in bottle and aged on the lees for 6 months before disgorging. A wonderfully fleshy pet’ nat’ with an abundance of mineral notes that add to its complexity.
