A Pas de Velours

From a parcel planted on clay and limestone, the grapes were harvested and then macerated in whole bunches for 3 weeks before being pressed into stainless steel for a 9 month elevage. It has a pleasing density and concentration to its palate of dark fruit, followed by a long finish of smoke and earth making it an ideal companion to heartier winter dishes. Sadly production was down in this parcel in 2020 so we received only a fraction compared to 2019.
